last week in food…

Between my mom being in the hospital, DragonCon, a late summer cold, and the office move, I have just been staggering through life, but last week I hit the wall and exploded into some kind of over-compensating kitchen binge.


Soups (it's been raining for a week, I needed the comfort food factor):
  • Classic chicken noodle
  • Semi-healthy broccoli-cheese
  • Italian wedding, with chicken meatballs and spinach (I brought some of this into the office today, with some prosciutto and melon and cheese, and a little bit of no-knead bread. I can't wait for lunch.)

    Mains:
  • Pot roast, very classic with some root veggies, made with a couple of shoulder roasts from my father-in-law's cattle (ie, organic w/o the paperwork that says organic.)
  • Lemon thyme chicken, pan-seared and finished off in the oven
  • Chicken pot pie (but I cheated and used frozen biscuits to top it)
  • Chicken-bacon ranch French bread pizzas (which, yay! used up all the fresh mozzarella before it went off.)

    Random extras:
  • Banana bread
  • Brownies


    After all that, I'm thinking this week is going to be nothing but creative re-use of the leftovers (opening the refrigerator door is an exercise in dodging falling Tupperware. The dog is in heaven, waiting to see what might explode upon contact with the floor.)

    I will have to try the buttermilk trick the next time I have enough veggie bits to make a quiche (it sounds like I make my quiche like you make Nothing Soup!)

    It turned out very well for all the shortcuts I took. I did make my own meatballs, but I only used ground chicken (rather than the veal/pork/chicken mix my grandmother used) and I just threw in chopped, frozen spinach rather than hunting down escarole. It's been raining here for a week--the soup was perfect.

    My AC is still kicking on, but it's been raining for a week, so I just threw in the towel and went for the soup cure.
